251mm ‘Nitro-V Gyuto-Hiki

This ‘gyuto-hiki’ (sujihiki with a ‘tall’ heel) is 251mm edge length, by 51mm tall at the heel. The handle is my ‘Western Hybrid’ geometry with relieved forward flanks, in natural stabilized flamed box elder with tru-stone and G10 spacers. The knife is ground from ‘Nitro-V’ stainless steel in my ‘laser’ geometry for pure cutting function. Amazing through protein, but still very usable for general prep, with great board clearance.
